Another delicious dish is “ash”, a thick and tasty soup of lentils, beans, starch noodles, vegetables and yoghurt.
Fragrant rice, often coloured with saffron or flavoured with a variety of spices, is the staple of local food. Flat bread (“nān”) is another pillar of Iranian cuisine. Sweets and pastries are known collectively as “shirini”. Black tea (“chāi”) is served strong and with crystallised or cubed sugar (“ghand”) which is held between the teeth while tea is sipped through. Local men like to drink tea and puff away on a water pipe.
