You’ll see the rows of dimples dug in the nutrient-rich volcanic soil. The granules of volcanic rock can absorb moisture from the air, retain the night humidity and prevent evaporation. The 10,000 hollows, surrounded by semi-circular walls, were built by hand for each individual vine to provide protection from the wind.
